Lamb in Guinness

Geoff’s lamb shanks in Guinness are a firm favourite with our dinner party guests - so we’ve decided to lift the lid on this extra special recipe.


What you’ll need:

• 4 lamb shanks (available from Riley’s)
• 2 large red onions, or 3 small red onions - chopped
• a sprig of rosemary
• 1 tablespoon of tomato ketchup
• 1 tablespoon of Worchester sauce
• 1 handful of raisins
• 2 tablespoons of orange marmalade
• 1 litre of chicken stock
• 1 can of Guinness

1. Take a large pan and sweat the onions with the lid on until they begin to caramelise.
2. Next add the marmalade, tomato ketchup and Worchester sauce and allow it to melt in a little.
3. Add the raisins and stir.
4. Take the chicken stock and pour over the mixture, cook for about two minutes and then add the Guinness.
5. In the meantime, take the lamb shanks and fry them in separate pan lamb shanks until they are sealed all the way round.
6. Fry the rosemary so it goes crispy.
7. Then transfer the lamb shanks, juices and rosemary into the pan with the sauce and cover.
8. Simmer for three hours.
9. After three hours, take the lamb shanks out of the pan and place them in a dish to keep warm.
10. Then liquidise the remaining juices and boil for 10-15 minutes until the mixture reduces by half to create a gravy.
11. Serve the lamb shanks on a bed of mashed potatoes and spring vegetables.
12. Then drizzle the gravy around the plate and enjoy.
